Marzipan - what is it and what is it made of?
The first mention of such a dessert appeared in the Middle Ages in Europe. Now some call it mastic, but this is not entirely true.

Having tried for the first time, you will never guess what marzipan is made of. But everything is quite simple - almonds and sugar crushed into flour are used for its preparation. The components are mixed until a kind of dough is formed, from which sweets, figures or fillings for desserts are then formed.
Initially, such a dessert was made and sold only in pharmacies, because it was considered a healing medicine for the soul. A little later, the famous confectioner Lorenz Cavizel began to make various figures from this test, called marzipan.
The recipe for marzipan at home
If you do not like the purchase option of such a treat or just want to experiment, then be sure to try making marzipan at home. You do not need a huge list of products or special culinary skills for this. It is enough to familiarize yourself with the options below and choose the one that suits you best.
Cold way
The easiest recipe, no additives. The resulting mass can be stored in the cold and used if necessary.
The indicated proportions are given for 900 grams of the finished product.If you need a different amount - adjust the weight of the ingredients, keeping their ratio.
For cooking you will need:
- two eggs and two more yolks;
- about a glass of sugar and the same amount of powdered sugar;
- a pair of glasses without a hill of almond flour;
- vanilla essence - six drops;
- two tsp lemon juice.
Cooking process:
- Prepare two containers. Put sugar, powder and almond flour in one, and yolks, essences, eggs and lemon juice in the other.
- Gently introduce the liquid components into the dry mixture and mix until smooth.
- Put everything on a flat surface, lightly sprinkled with powdered sugar, and knead until a dense and elastic state.

- 150 grams of sugar.

- Put the almonds for a while in boiling water, then peel them, rinse under cool water and dry in the oven for five minutes, setting the heat to 60 degrees.

Making marzipan figurines is a snap. Surely you remember the principle of modeling from plasticine in kindergarten. So, the almond mass is about the same in consistency and properties, only edible.

Required Products:
- 100 grams of powdered sugar;
- four eggs;
- 0.6 liters of cream;
- a pinch of salt;
- baking powder spoon;
- 120 grams of sugar;
- 0.35 kg of marzipan mass;
- two packs of vanilla sugar;
- 0.2 kg of nuts;
- two packs of cream thickener;
- 120 grams of flour.
Cooking process:
- Combine a little salt, three large spoons of water and protein, whisk until foam.
- After that, introduce a pack of vanilla sugar, 0.1 kg of granulated sugar, yolk, baking powder with flour and mix everything thoroughly.
- The resulting mixture is transferred to a mold and baked at 200 degrees for about 25 minutes until golden. Then we divide the workpiece into two parts and leave it to cool completely.
- The remaining sugar is mixed with a second packet of vanilla sugar and with a thickener. We begin to whip the cream and pour this dry mixture into them until peaks form.
- We postpone a third of the resulting mass, and add chopped nuts to the other part. Stir and coat the finished cake with the finished composition.
- On top of it we lay the second cake, which we coat with the previously deferred part of the cream.
- Combine marzipan with icing sugar, knead until smooth, roll into a layer and transfer to cakes, evenly distributing. It remains only to decorate the finished cake to your liking and let it stand in the refrigerator.
Marzipan sweets
Required Products:
- 30 grams of chocolate;
- three quail eggs;
- 0.1 kg of powdered sugar;
- 5 milliliters of white rum;
- 0.15 kg of almonds.
Pour the nuts first with hot water, then cold and easily peel the skin. As soon as the almonds dry, grind it in any way.

- We mix the resulting nut flour with powdered sugar, add rum or vanilla essence, as well as egg whites, which can be replaced with milk.
